Ademas del cuidado general de arboles y suelo podemos destacar dos puntos clave que determinan su espectacular sabor y calidad:
Uno de ellos es el aclareo, poco después de la floración retiramos manualmente todas las manzanas sobrantes o dañadas, seleccionando una por una las mejores.
El otro punto clave es que nuestras manzanas maduran hasta el final en el árbol. Ésto que suena tan simple y natural, ya no se realiza en el cultivo de la manzana debido a las grandes pérdidas que se producen en esta fase final por pájaros e insectos y porque además implica una manipulación de la fruta mucho mas delicada. Para nosotros la calidad que conseguimos de esta manera compensa con creces estos inconvenientes.
